CAP's Kitchen
RECIPES FRONT PAGE02

In November 2007, with the support of five UK celebrity cooks and local restaurants, CAP
published a recipe book in aid of the Elliot George Foundation.
Launched at our Christmas Fair it was an instant success. However, we need to sell more
copies throughout the year to raise funds for this important cause.
The book, produced and edited by Celia Burnett and Marianne Wicks, and beautifully illustrated
by Marianne, is spiral-bound with a laminated cover. At only €5 it is great value, and makes a
super gift for your friends and relatives. Get your copies at our Wednesday meetings, or from
  Celia on 952 883120.

Introduction

The Elliot George Foundation (www.fundacionelliotgeorge.com) was started by Alain and Rebecca Mols in 2000 with one clear aim: To raise funds to help local children with brain injury and special needs.
Alain was the Honorary President of our club until his untimely death in October 2006, aged only 41. Although greatly shocked, the Mols family are striving to continue their work, and CAP continues to support this cause.
This is in no way a ‘celebrity cookbook’ but we decided to contact a few UK celebrity cooks to ask if they would support our project. Not one refused, and they all have donated a recipe. Their names are listed below.
We also asked a few local restaurants for one dish we could feature in their name. In this we have been less successful; perhaps some were suspicious we were trying to take their trade away! However, we are very grateful to those who did contribute.
Our theme is simplicity—let’s face it no-one wants to slave away in the kitchen when it’s too hot, or when time is short. We aim to take shortcuts wherever possible without losing out on taste, but sometimes a little effort has to be made.
We have also included a shopping guide: in the UK you can get mostly everything in any supermarket, but here you have to make more of an effort to search out ingredients. Things do change quickly here though, so be aware of this.

Acknowledgements

Nigella Lawson—Always so gracious
Mary Berry—A stalwart, and recently returned to TV
Martin Blunos—A relatively new ‘celeb’ chef but he has 2 Michelin stars
Antony Worrall Thompson—A big softie
Keith Floyd—A law unto himself

Catering establishments and others are recognised where their recipe appears,
and we sincerely thank everyone who has contributed.
Our sponsors: Universal Kitchens, El Paraiso Country Club and The Terrace Bar have made publication possible by believing in our aim, and covering much of the printing costs—
releasing more money for the foundation.

Thanks also go to Brian and Michael for putting up with the long hours we have spent on this project but whom, we think, have been amply compensated by having tested most of the recipes
 in the book!
Michael deserves a special mention for his painstaking proofreading of each draft.

Most of all we thank YOU, for buying our book and thus helping those children
who need your contribution to give them the best life possible.

Celia and Marianne
